Parmesan Crusted Lemon Chicken

Is it really May 10th? This year just seems to be whizzing by.. So Mothers Day is tomorrow? and speaking of Mothers Day, you cant make Mom cook so Hopefully this easy Delicious Chicken recipe will inspire you!

Recipe as follows:

  • 1/2 cup Parmesan cheese
  • 4 TBLS softened butter
  • 3 TBLS Mayonnaise
  • 2 TBLS fresh lemon juice
  • 1/8 tsp fresh cracked pepper
  • 1/4 tsp salt
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 6 boneless skinless chicken breasts ( Thinned )

Directions:

  1. Preheat broiler and cover baking sheet with foil and lightly spray with cooking spray
  2.  next, In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Stir in the , pepper, salt, onion powder and garlic powder. Mix well and set aside.
  3. Place the chicken breasts in a single layer on the prepared baking sheet. Lightly season each side of the chicken with salt and pepper. Broil a few inches from the broiler element for 4-5 minutes. Flip the chicken over and broil for a 3-4 more minutes, until mostly cooked through. Remove the baking sheet from the oven and spread equal the Parmesan mixture over the top of each chicken breast. Broil for another 2-3 minutes until the topping is golden brown and bubbly and the chicken is completely cooked through.

Sugar cookie fun

My kids have been begging me to make cookies.. so we decided to bake up some sugar cookies. I love to stand by and watch my little babes decorate.. and eat the cookies. I think sometimes its a fun kinda night when you take a break from the normal night to night routine to do something special. And whats more special then tasty homemade cookies.. So tonight we bring you another Matilda Jane and target outfit and some cookies!

Homemade Sugar Cookies

Recipe as follows:

  • 1 1/3 cup butter or shorting ( I used butter flavored crisco shorting)
  • 1 1/2 cup sugar
  • zest of 1 orange
  • 2 eggs
  • 1 tsp vanilla extract
  • 4 cups all purpose flour
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 2 TBLS whole milk
  • colorful sprinkles

Directions:

Beat the shortening (or butter), sugar, and zest in a bowl until smooth, then add the eggs and vanilla beat together until all combined.  in a separate bowl sift together the flour, baking powder, and salt. Alternate adding the dry ingredients with the milk until the dough comes together.

Separate dough in two sections and refrigerate a few hours. 

After the dough is chilled, preheat the oven to 375 degrees. Roll out both halves of the dough to 1/3 inch thick and cut out as many cookies as you can. Place the cookies on a baking sheet lined with a baking mat sprinkle your colorful sprinkles and bake them for 8 to 10 minutes, or until they’re just barely done. They should not brown but set.

Penne alla Vodka

My little family and I are big pasta eaters.. however my husband not so much, Well this recipe changed his mind! Maybe its the Vodka.. All I can say is this recipe is a must try!

Recipe as follows:

 

INGREDIENTS

  • 1 box Penne pasta
  • 2 TBLS olive oil
  • 2 TBLS butter
  • 1 Med onion chopped, finely
  • 2 garlic cloves
  • 3/4 cup Vodka
  • 1 14oz can tomato puree
  • 1 cup heavy cream
  • 1 pinch red pepper flakes
  • 1/2 tsp salt
  •  fresh cracked pepper to taste
  • 1 cup Parmesan cheese

Directions:

Cook Penne according to package instructions

In large skillet add butter and oil, Once melted add chopped onion and garlic cook 2-3 minutes. Add vodka cook another 3 minutes and add Tomato puree/ reduce heat to low and add heavy cream , stir in pepper flakes, salt and pepper.

Drain the pasta. Add cooked pasta to the sauce, tossing to combine. Stir in Parmesan cheese.

Top with fresh grated Parmesan and basil

Fresh Flour Tortillias

Are you looking for a supper easy delicious recipe? Well this is as easy as can be. I have always been a bit scared of making breads and tortillas and to be honest all the times I have tried that have kinda turned out an utter disaster! We served our homemade tortillas with fresh grilled chicken, homemade guacamole and salsa and fresh beans! Its the perfect Cinco De Mayo recipe!

Recipe as follows:

 

INGREDIENTS

  • 2 Cups all purpose flour
  • 3/4 tsp salt
  • 1/2 tsp baking powder
  • 3 TBLS shorting
  • 3/4 cup water

Directions:

In a mixing bowl mix together flour, salt and baking powder, add shorting and combining with a fork until coarse crumbs are formed. Make a well in the center of the flour mixture and pour water.

Place dough on flour surface and kneed 3-4 minutes. Place dough back in bowl and let sit for 30 minutes. ( now you have time to prepare the rest of your meal 🙂 )

Next, cut the dough in 12 equal sections. Now you roll each section into 6-7 inch circles.

Heat skillet to medium heat. cook tortillas on until lightly browned ( about 2 minutes on each side) Once cooked place tortillas in towel so they stay warm.

Cheese and Onion Enchilada

Happy Hump day.. Today was surely a ruff day so I wanted to make something tasty and quick! My family loves Mexican food, so I went on a search for a new recipe. When I came across this I knew I had to make it! What is better then homemade sauce! Cheese! oh my! I can say I got my Mexican food fix.. We hope you enjoy it as much as we did.

Recipe as follows:

 

INGREDIENTS

For the sauce:

  • 1/4 Cup Vegetable oil
  • 1/4 cup all purpose flour
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 1 1/2 tsp garlic powder
  • 2 tsp cumin
  • 1/2 tsp oregano ( I used Mexican oregano)
  • 2 TBLS chili powder
  • 2 cups chicken broth

Directions for Chili sauce:

Heat oil in a medium skillet over medium-high heat. Stir in flour and continue stirring for 3-4 minutes, this will make the roux. Once browned add all dry ingredients and stir for another minute. Add chicken broth and simmer 15 minutes until sauce has thickened.

Enchiladas:

  • 2 Cups chili gravy
  • 3-4 TBLS oil
  • 8-10 corn tortillas
  • 3 cups cheddar cheese
  • 1 red onion chopped
  • Green onion to garnish

DIRECTIONS 

Preheat oven to 450*, pour 1-2 TBLS oil in skillet and gently fry tortillas until they are soft. Add cheese and onion in center and roll enchilada. Once all are filled pour sauce on bottom of baking dish, add filled enchiladas and pour remaining sauce over enchiladas. Top with remaining cheese.

Bake 15-20 minutes uncovered until bubbly. Serve immediate with fresh green onions.

Baked Turkey Meatballs with Tomato Cream Sauce

Happy Sunday! I was craving some comfort cook and something I could use for dinner and make some tasty left overs. I found this AMAZING recipe at Annies Eats, and it did not disappoint! I did adapt this recipe with what I had on hand as the original recipe calls for Chicken.. I hope you enjoy it as much as we did!

Recipe as follows:

 

INGREDIENTS

For the sauce:

  • 1 28oz can whole tomatoes
  • 1 TBLS butter
  • 1/4 cup diced onion
  • 1/1/2 TBLS tomato paste
  • 1/3 cup heavy cream
  • 2 Cloves of Garlic
  • Pinch crushed red pepper
  • Salt and pepper to taste

For the meatballs:

  • 1/2 Cup panko bread crumbs
  • 1/3 up diced onion
  • 2 tsp Italian Season
  • 1/2 Cup Parmesan cheese
  • Salt and pepper ( 1/2 tsp of each)
  • 3 garlic cloves
  • 1 Egg ( beaten)
  • 1 LB ground turkey 
  • 2 TBLS olive oil

Topping:

  • 4 Oz shredded mozzarella cheese
  • 2 TBLS Parmesan cheese

DIRECTIONS 

Sauce: Combine all ingredients together ( I mix with my hands) Be sure not to over mix. 

Blend the whole tomatoes in food processor until smooth, Melt butter over med heat in large sauce pan,Add onion and cook until fragrant ( about 1 min) Then add Tomato paste,garlic and crushed red pepper ( seconds) slowly add tomato mixture and cream and simmer on LOW 5-10 minutes until sauce is thickened. Season with salt and pepper.

Meatballs: 

Mix together all ingredients  ( except Olive oil ) Form meatballs and set aside

Preheat oven 400*, Add olive oil to pan, once hot, brown meatballs on all sides.

Once all meatballs are browned place them in pan ( Oven safe) with sauce, Sprinkle with  cheeses and bake 15-20 minutes until hot and bubbly.

Serve with Fresh bread and salad!

Peach, Blackberry and Banana Smoothie

There is nothing better then a healthy and tasty breakfast (or snack) This smoothie features fresh blackberries and peach yogurt! This recipe was inspired by my favorite cooking blog For the love of cooking.

Recipe as follows:

INGREDIENTS

  • 2 Cups of Ice
  • 1 1/2 cups peach yogurt
  • 1 cup fresh blackberries
  • 1 banana
  • 1 tsp honey

DIRECTIONS Blend together ice, yogurt, blackberries, banana and honey until smooth. Pour smoothie in glass with straw. Enjoy!
