Malibu Chicken

This delectable dish is something that is super quick and easy to put together. When life throws baseball practice until 6:30 and you have two hungry kiddos looking for dinner kinda recipe!

The Cast of Characters: boneless/skinless chicken breasts, swiss cheese, deli sliced honey ham, panko bread crumbs, eggs, Parmesan cheese and salt and pepper of course!

Recipe as follows:

Ingredients:

  • 6 thin cut chicken breasts
  • 2 eggs
  • 1 1/2 cups panko bread crumbs ( I used Italian seasoned but you can throw a tablespoon of Italian seasoning if you do not have it)
  • 1 cup Parmesan cheese ( shredded)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper or to taste
  • 6 slices honey deli ham
  • 6 slices of swiss cheese
  1. Preheat oven to 350 degrees and grease a baking dish (9×13)
  2. Whisk eggs in a shallow pan. In a separate shallow pan combine bread crumbs,Parmesan cheese, salt and pepper.
  3. Dip chicken in egg then breadcrumbs. Lay flat in baking dish and bake about 30 minutes. Once chicken is cooked lay the ham and top with swiss cheese. Continue baking for 5 minutes until cheese is bubbly.
  4. Serve immediately!

Baked chicken with creamy mushroom sauce

The perfect comfort food.. creamy..mushroomy.. chickeny.. spell check is going crazy so those must not be real words.. but they should be. This skillet is simple, baked chicken in a creamy sauce is something the whole family will love!

Recipe as follows:

Ingredients:

  • 6-8 bone in skin on chicken thighs
  • salt and fresh cracked pepper to taste
  • 3 garlic cloves, minced
  • 3 Tablespoons butter
  • 1 8oz package mushrooms
  • 1 cup chicken broth
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese

Directions:

1. Preheat oven to 400 degrees F, season chicken thighs with salt and fresh cracked pepper.

2. Melt 2 Tablespoons butter in a large oven proof skillet over medium high heat. Place chicken thighs skin down once pan is hot and butter has melted and cook until golden brown 3-5 minutes per side, then set aside.

3. Melt 1 Tablespoon butter in the same skillet adding your mushrooms and garlic cook about 3- 5 minutes until browned and tender. Add in chicken broth, dried spices and salt and pepper. Add chicken back to skillet and pop in the oven about 25-35 minutes until your chicken is completely cooked through.

4. Once chicken is cooked remove from over and over low heat stir in heavy cream and Parmesan and simmer about 5 minutes. Serve chicken immediately, topped with mushroom cream sauce.

Shredded Beef Tacos

My family are taco people.. I mean the LOVE tacos! So when I came across this recipe I knew that I would have to whip it up. As I am not a big beef eater these really surprised me.. The meat totally melts in your mouth and has a ton of flavor.

I must say my hubby was happy guy when he came home to homemade tacos and ice cold beer!

Recipe as follows:

Ingredients:

  • 2 teaspoons olive oil
  • 2 lbs chuck roast ( trim the fat)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder ( more if you like)
  • 1 teaspoon paprika
  • 1/2 teaspoon oregano
  • 1/2 teaspoon coriander
  • salt and pepper to taste
  • 2 cups beef broth
  • 1 6oz can whole green chilies
  • 1/2 jalapeno, seeded and de-veined and chopped
  • 6 garlic cloves minced

Other ingredients:

  • Four tortillas
  • Sharp cheddar cheese ( shredded for topping)
  • ciliantro
  • Salsa
  • Fresh guacamole

Directions:

1.Heat oil in dutch oven over medium heat, season your chuck roast with seasons evenly and roast 2-3 minutes on each side until browned and seared.

2. Add beef broth, chilies, jalapeno, and garlic. Place lid over dutch oven and and roast in oven about 2 hours. Check every 30 minutes to see if more broth is needed.

3. Once beef is tender shred with forks. Scoop meat onto tortilla and top with your favorite toppings!

Chicken Tostadas with Avocado cream

Tostadas are a very simple and quick dish for dinner or lunch and is soooo tasty! And.. adding the avocado sauce just puts that extra pizzazz.. yes I just used tat word pizzazz..

Rotisserie chicken made this dish even more simple and was the perfect meal for after a late baseball game on a weeknight!

Recipe as follows:

  • 2 Cups shredded cooked chicken
  • 1/2 cup re-fried beans
  • 1 tbls Canola oil
  • 1/2 red onion chopped
  • 1 tsp cumin
  • 1/2 tsp coriander
  • salt and pepper to taste
  • tostata shells- or you can fry your own!
  • shredded lettuce
  • chopped tomato
  • shredded cheddar cheese
  • avocado dressing – recipe follows

Directions:

1. Heat oil in fryer pan and add onion, cook 4-5 minutes until soft, add chicken, cumin, coriander and salt and pepper to taste

2. spread warmed refried beans over tostada and top with chicken mixture, lettuce, tomato and cheese.Top with avocado sauce

Avocado sauce:

  • 2 tbls sour cream
  • 2 tbls chicken broth
  • 2 tbls lemon juice ( fresh)
  • 2 tsp canola oil
  • salt and pepper to taste
  • 1 avocado

In food processor combine all ingredients and blend until smooth

Parmesan Crusted Lemon Chicken

Is it really May 10th? This year just seems to be whizzing by.. So Mothers Day is tomorrow? and speaking of Mothers Day, you cant make Mom cook so Hopefully this easy Delicious Chicken recipe will inspire you!

Recipe as follows:

  • 1/2 cup Parmesan cheese
  • 4 TBLS softened butter
  • 3 TBLS Mayonnaise
  • 2 TBLS fresh lemon juice
  • 1/8 tsp fresh cracked pepper
  • 1/4 tsp salt
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 6 boneless skinless chicken breasts ( Thinned )

Directions:

  1. Preheat broiler and cover baking sheet with foil and lightly spray with cooking spray
  2.  next, In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Stir in the , pepper, salt, onion powder and garlic powder. Mix well and set aside.
  3. Place the chicken breasts in a single layer on the prepared baking sheet. Lightly season each side of the chicken with salt and pepper. Broil a few inches from the broiler element for 4-5 minutes. Flip the chicken over and broil for a 3-4 more minutes, until mostly cooked through. Remove the baking sheet from the oven and spread equal the Parmesan mixture over the top of each chicken breast. Broil for another 2-3 minutes until the topping is golden brown and bubbly and the chicken is completely cooked through.
