Malibu Chicken

This delectable dish is something that is super quick and easy to put together. When life throws baseball practice until 6:30 and you have two hungry kiddos looking for dinner kinda recipe!


The Cast of Characters: boneless/skinless chicken breasts, swiss cheese, deli sliced honey ham, panko bread crumbs, eggs, Parmesan cheese and salt and pepper of course!


Recipe as follows:


  • 6 thin cut chicken breasts
  • 2 eggs
  • 1 1/2 cups panko bread crumbs ( I used Italian seasoned but you can throw a tablespoon of Italian seasoning if you do not have it)
  • 1 cup Parmesan cheese ( shredded)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper or to taste
  • 6 slices honey deli ham
  • 6 slices of swiss cheese
  1. Preheat oven to 350 degrees and grease a baking dish (9×13)
  2. Whisk eggs in a shallow pan. In a separate shallow pan combine bread crumbs,Parmesan cheese, salt and pepper.
  3. Dip chicken in egg then breadcrumbs. Lay flat in baking dish and bake about 30 minutes. Once chicken is cooked lay the ham and top with swiss cheese. Continue baking for 5 minutes until cheese is bubbly.
  4. Serve immediately!

Honey soy chicken drumsticks

Baked in the oven these drumsticks are a tad of sweet,tangy and spicy all in one! 


I made this chicken the other night and if I must be honest I am not a drumstick fan. I got these drumsticks being well attempting to be a cheap skate and chicken breasts can be more on the pricey side. Well these were AMAZING! Packed with flavor, fall off the bone tender meat. aaahhhhhh… the good life!


Recipe as follows:


  • 6 bone in skin on drumsticks
  • 2 tbsp olive oil
  • 1 tbsp sesame seed oil
  • 5 tbsp honey
  • ¼ cup soy sauce
  • 3 garlic cloves minced
  • 1 tsp fresh grated ginger
  • salt and pepper to taste
  • chopped green onions for garnish.
  1. In a shallow baking dish whisk together all ingredients, except chicken of course!
  2. Toss chicken in marinate and cover and refrigerate for at least 3 hours or over night.
  3. Pre-heat oven to 350 degrees. Uncover chicken and bake about an hour turning chicken over mid-way so the chicken will be evenly coated and get that beautiful caramel color.

Chicken salad croissant sandwiches

I love chicken salad but I am a bit picky with how it is prepared. As surprising as it may be I have never tried my chicken salad with grapes.. **GASP**  But to my surprise I really  enjoyed it. This recipe is very simple recipe to make and makes great leftovers for lunch the next day!


Recipe as follows:


  • 4 cups cooked, shredded chicken ( I used a rotisserie chicken from costco!)
  • 1 1/2 cups chopped celery
  • 1 1/2 cups red grapes, halved
  • 2 green onions, thinly sliced
  • 1 cup mayonnaise
  • 1/4 cup sour cream
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • juice of half a lemon
  • 8 Croissant rolls
  1. combine the chicken, celery, grapes and green onion to a large bowl.
  2. In a separate small bowl , add the mayonnaise, sour cream, pepper, salt and lemon juice. Whisk together until combined. Pour the dressing over chicken/grape mixture.
  3. Cover and refrigerate at lease two hours or overnight
  4. Slice croissant in half and scoop a good portion into each croissant. Enjoy!!

Baked chicken with creamy mushroom sauce

The perfect comfort food.. creamy..mushroomy.. chickeny.. spell check is going crazy so those must not be real words.. but they should be. This skillet is simple, baked chicken in a creamy sauce is something the whole family will love!


Recipe as follows:


  • 6-8 bone in skin on chicken thighs
  • salt and fresh cracked pepper to taste
  • 3 garlic cloves, minced
  • 3 Tablespoons butter
  • 1 8oz package mushrooms
  • 1 cup chicken broth
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese


1. Preheat oven to 400 degrees F, season chicken thighs with salt and fresh cracked pepper.

2. Melt 2 Tablespoons butter in a large oven proof skillet over medium high heat. Place chicken thighs skin down once pan is hot and butter has melted and cook until golden brown 3-5 minutes per side, then set aside.

3. Melt 1 Tablespoon butter in the same skillet adding your mushrooms and garlic cook about 3- 5 minutes until browned and tender. Add in chicken broth, dried spices and salt and pepper. Add chicken back to skillet and pop in the oven about 25-35 minutes until your chicken is completely cooked through.

4. Once chicken is cooked remove from over and over low heat stir in heavy cream and Parmesan and simmer about 5 minutes. Serve chicken immediately, topped with mushroom cream sauce.

Oven baked BBQ chicken

So I am not a grill master.. But I love me some BBQ! That is why when I came across this oven baked BBQ chicken this was the perfect recipe for me! I did change this recipe up a bit to fit my taste-buds. Hope you enjoy as much as we did!





Recipe as follows:


  • 3 cups BBQ sauce
  • 1/2 cup peach preserves
  • 1 Garlic clove
  • dash of hot sauce
  • 6 boneless skinless chicken breast ( Original recipe calls for bone in/skin on thighs)
  • Olive oil


1. Combine BBQ sauce, Peach preserves, minced garlic and hot sauce in a medium saucepan over low heat 5-10 minutes

2. Preheat oven to 400 degrees

3. Drizzle olive oil over chicken and roast about 20 minutes remove and brush sauce over tops and roast another 7-10 minutes until cooked through.

4. Let stand 5-7 minutes before serving

Jalapeno Cheddar chicken burgers with Guacamole

I have been holding out on you and I am very sorry. A few weeks ago we made these delicious chicken burgers. This is the perfect summer grill recipe. Add some corn on the cob and some juicy watermelon.. Ok, you can put the drool back and make these delicious burgers!




Recipe as follows:


  • 1LB ground chicken
  • 1/2 cup yellow onion, diced
  • 1/3 cup minced fresh cilantro
  • 2 garlic cloves, minced
  • 1 Jalapeno, seeded and minced
  • 1tsp ground cumin
  • 1tsp paprika
  • Juice of 1/2 lime
  • 1/3 cup shredded cheddar cheese
  • 1/2 tsp salt and pepper

To serve:

  • Burger buns
  • Guacamole
  • lettuce
  • tomato


1. Heat grill to medium and oil grates to prevent sticking.

2. To make burgers combine all ingredients in a large bowl mixing until combined.

3. Cook patties about 3-5 minutes per side flipping once. Once cooked add shredded cheese. Cook until thermometer reads 160* F.

4. Assemble burgers with Guacamole, lettuce and any other desired toppings.

Parmesan Crusted Lemon Chicken

Is it really May 10th? This year just seems to be whizzing by.. So Mothers Day is tomorrow? and speaking of Mothers Day, you cant make Mom cook so Hopefully this easy Delicious Chicken recipe will inspire you!



Recipe as follows:

  • 1/2 cup Parmesan cheese
  • 4 TBLS softened butter
  • 3 TBLS Mayonnaise
  • 2 TBLS fresh lemon juice
  • 1/8 tsp fresh cracked pepper
  • 1/4 tsp salt
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 6 boneless skinless chicken breasts ( Thinned )


  1. Preheat broiler and cover baking sheet with foil and lightly spray with cooking spray
  2.  next, In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Stir in the , pepper, salt, onion powder and garlic powder. Mix well and set aside.
  3. Place the chicken breasts in a single layer on the prepared baking sheet. Lightly season each side of the chicken with salt and pepper. Broil a few inches from the broiler element for 4-5 minutes. Flip the chicken over and broil for a 3-4 more minutes, until mostly cooked through. Remove the baking sheet from the oven and spread equal the Parmesan mixture over the top of each chicken breast. Broil for another 2-3 minutes until the topping is golden brown and bubbly and the chicken is completely cooked through.
