Salmon with tomatoes and lemon
Its FRIDAY….. Ok I just had to mention that before I share this delcious easy and healthy Salmon recipie. I didnt always like salmon, actully I never gave it a chance but when cooked just right and when the fish is fresh.. it tastes amazing! This is my own creation so I hope you enjoy!!
Recipe as follows:
Ingredients:
- salmon fillets
- 1 lemon
- cherry tomato’s
- 1 TBLS olive oil
- fresh cracked pepper and sea salt
- 1 tsp paprika
- 1 tsp garlic powder
Directions:
1. Place salmon in foil and coat with olive oil, season with salt. pepper, paprika and garlic powder. Top with lemons and cherry tomatoes
2. Make a foil pouch and bake in oven for 25-30 minutes

Blueberry Muffins
I love random weekdays off.. They make me happy! Verrrry Happy! As do these moist delicious muffins!!
I had blueberries in the freezer begging to be used so I went on a search and when I came across this recipe I had to give it ago. I hope you enjoy as much as me and my 2 year old daughter.
Recipe as follows:
Ingredients:
Lemon Sugar topping
- 1/3 Cup Sugar
- zest of one lemon
Muffins:
- 2 cups frozen or fresh blueberries ( We used frozen)
- 1 1/8 plus 1 Tsp sugar
- 2 1/2 cups all purpose flour
- 2 1/2 tsp baking powder
- 1 tsp salt
- 2 eggs
- 4 TBLS butter, melted and slightly cooled
- 1/4 cup oil ( We used Vegetable )
- 1 cup buttermilk
- 1 1/2 tsp Vanilla extract
Directions:
1. Lemon-sugar topping: combine the sugar and lemon zest together in a small bowl and set aside.
2. Muffins- preheat over to 375* spray muffin tin with nonstick cooking spray. rinse one cup of blueberries under cold water and dry well. Bring remaining one cup of blueberries to a simmer with over medium heat with 1 tsp of sugar. While cooking mash berried with a spoon until berries have broken down about 5-8 minutes. transfer to a bowl to cool while you prepare batter.
3. Whisk together flour, baking powder and salt in a large mixing bowl. toss the berries that have dried to flour mixture. Whisk remaining sugar and eggs until thickened about 45 seconds. slowly whisk in the butter and oil until all combined. Using a rubber spatula fold egg mix into the flour/berries mixture. DO NOT OVER-MIX
4. Fill muffin tin about 3/4 full and spoon the cooked berry mixture on top. sprinkle the lemon sugar mixture on top and bake 17-18 minutes until firm. Allow 5-10 minutes to cool before serving!

Chipotle Chicken Tacos and Tomatillio Salsa
I loved this recipe! Slightly subtle spicy flavor of chipotle.. it was like taco truck tacos at home! This was a recipe that my whole family enjoyed.
Recipe as follows:
Ingredients:
- 1 whole chicken cut into quarters
- 4 garlic gloves, peeled and whole
- 1 yellow onion peeled and quartered
- 1 celery stalk cut in half
- 1 stem of cilantro
- 1 bay leaf
- 1 tsp peppercorns
- 1 TBS salt
Chipotle Sauce:
- 1/2 cup chicken broth
- 1 1/2 cup canned crushed tomato’s
- 2 chipotle chilies en adobo
- 1/4 yellow onion
- 4 garlic cloves
- 1 tsp oregano
- 1/2 tsp cumin
- pinch of allspice
- 1/4 cup cilantro
- 1 tbls lime juice
- 2 tbls canola oil
- salt and pepper to taste
- tortillias/limes/salsa/avocado for garnish
Directions:
1. Place chicken in in large pot along with other ingredients cover with water and simmer about an hour or until chicken is cooked through. Remove chicken from pot and once cooled shred with two forks.
2. Meanwhile, strain the broth throwing out veggies. pour a half cup of strained chicken broth in blender with other ingredients for chipotle sauce and blend until smooth. in medium sauce pan heat sauce on low about 15 minutes. With heat still on add the shredded chicken and cook until heated though.
Serve chicken on warmed tortillas topped with your favorite taco toppings
Tomatillio Salsa:
- about 12 tomatillios husked and cut in half
- 2 garlic cloves
- 1 Serrano chilies– stemmed and seeded
- 1/4 med yellow or white onion
- 1/4 cup chopped cilantro
- 1/4 tsp ground cumin
- 1 tbls canola oil
- salt to taste
Add all ingredients to food processor and blend until smooth
in a saucepan on med-low, heat oil and pour blended salsa into pan about 10 minutes stirring occasionally. taste salsa and adjust salt as needed. serve hot or cold

Chicken Tostadas with Avocado cream
Tostadas are a very simple and quick dish for dinner or lunch and is soooo tasty! And.. adding the avocado sauce just puts that extra pizzazz.. yes I just used tat word pizzazz..
Rotisserie chicken made this dish even more simple and was the perfect meal for after a late baseball game on a weeknight!
Recipe as follows:
- 2 Cups shredded cooked chicken
- 1/2 cup re-fried beans
- 1 tbls Canola oil
- 1/2 red onion chopped
- 1 tsp cumin
- 1/2 tsp coriander
- salt and pepper to taste
- tostata shells- or you can fry your own!
- shredded lettuce
- chopped tomato
- shredded cheddar cheese
- avocado dressing – recipe follows
Directions:
1. Heat oil in fryer pan and add onion, cook 4-5 minutes until soft, add chicken, cumin, coriander and salt and pepper to taste
2. spread warmed refried beans over tostada and top with chicken mixture, lettuce, tomato and cheese.Top with avocado sauce
Avocado sauce:
- 2 tbls sour cream
- 2 tbls chicken broth
- 2 tbls lemon juice ( fresh)
- 2 tsp canola oil
- salt and pepper to taste
- 1 avocado
In food processor combine all ingredients and blend until smooth
