Jalapeno Cheddar chicken burgers with Guacamole

I have been holding out on you and I am very sorry. A few weeks ago we made these delicious chicken burgers. This is the perfect summer grill recipe. Add some corn on the cob and some juicy watermelon.. Ok, you can put the drool back and make these delicious burgers!

Recipe as follows:

Ingredients:

  • 1LB ground chicken
  • 1/2 cup yellow onion, diced
  • 1/3 cup minced fresh cilantro
  • 2 garlic cloves, minced
  • 1 Jalapeno, seeded and minced
  • 1tsp ground cumin
  • 1tsp paprika
  • Juice of 1/2 lime
  • 1/3 cup shredded cheddar cheese
  • 1/2 tsp salt and pepper

To serve:

  • Burger buns
  • Guacamole
  • lettuce
  • tomato

Directions:,

1. Heat grill to medium and oil grates to prevent sticking.

2. To make burgers combine all ingredients in a large bowl mixing until combined.

3. Cook patties about 3-5 minutes per side flipping once. Once cooked add shredded cheese. Cook until thermometer reads 160* F.

4. Assemble burgers with Guacamole, lettuce and any other desired toppings.

Fresh Corn Chowder

I love corn, I love soup put them together and we have ringing bells. So to my kids, they can be picky.. they complain I dont like .. whatever it is that night I am cooking.. but this soup, they were quiet as a mouse eating and spilling soup along the way.

And.. I did not mention its fresh corn season.. so go grab your corn and come get this recipe!

Recipe as follows:

Ingredients:

  • 8-10 ears of corn
  • 2-3 strips of bacon, chopped
  • 1 Tbls butter ( unsalted)
  • 1 med yellow onion, chopped fine
  • 2 garlic cloves, minced
  • 3 Tbls all purpose flour
  • 3 Cups chicken stock
  • 2 Med red potatoes, diced * bigger chunks*
  • 1 small red bell pepper chopped
  • 1 bay leaf
  • 1 tsp fresh thyme
  • 2 cups whole milk
  • 1 cup heavy cream
  • fresh black pepper and salt to taste

Directions:,

1. Remove corn from 4 corn cobs and remaining corn grate the corn kernels to make a kernel pulp. You should have about 2 cups of pulp. Set aside

2. saute bacon is a heavy saucepan over med heat, until browned and crisp

3. Reduce heat to low adding butter and onions. Cover and cook until soft about 10-12 minutes. then remove bacon/onion mixture

4.Add garlic and cook until fragrant, about 1 minute. Then sprinkle flour and stir about 2 minutes. Then slowly whisk broth. Then add Potatoes, bell pepper, thyme, bayleaf, grated corn pulp, milk and bacon/onion mixture. allow to simmer 8-10 minutes until potatoes are soft.

5. Add corn and cream and season with salt and pepper, cook an additional 5 minutes and serve!

Lemon Poppyseed Cake with cream cheese frosting

Oh this cake! Its heaven! and its gone now and as I am posting this recipe I am missing and wanting another piece! But its gone! Lemons! Cream Cheese! Cake! Stop what you are doing and grab your kiddos and bake up this cake!

Recipe as follows:

Ingredients:

  • 1 Cup of Sugar
  • zest of 2 lemons
  • 3 Eggs
  • 1/2 tsp Vanilla
  • 1/2 cup milk + 1/2 teaspoon white vinegar
  • 3 TBLS Lemon Juice
  • 1 3/4 Cups all purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon poppy seeds
  • 1/2 Cup melted butter

Cream Cheese Frosting:

  • 3 oz soft cream cheese
  • 1/4 Cup butter
  • 1/ tsp vanilla
  • 1/2 cup powder sugar

Directions:

1.Preheat oven to 350 degrees. Spray 9 inch cake pan with nonstick cooking spray and set aside

2. In a large bowl, stir sugar and lemon zest together combine eggs and vanilla until smooth.

3. In separate bowl, combine milk, vinegar and lemon juice together. Set aside.

4.In a separate bowl, mix together flour, baking soda, baking powder and salt

5. Alternate stirring in wet and dry ingredients until everything is added into the cake batter. Gently stir in the poppy seeds and melted butter. Pour into cake pan and bake 45-55 minutes or until baked thoroughly and toothpick comes out clean after being inserted. Cool cake 15 minutes.

Now,for the frosting, mix all ingredients together until light and fluffy. Spread over cooled cake.

Cucumber, Tomato and Mozzarella Salad with Balsamic

We decided to grill some steaks and I needed a quick dish to add to our meal. I am happy to say I am cured from my fresh mozzarella craving.. To be honest I are quiet a few before they made it into the salad. This is a must try salad for all you fresh mozzarella lovers like myself!

Recipe as follows:

Ingredients:

  • 2 TBLS balsamic vinegar
  • 1 TBLS olive oil
  • 1 Cucumber sliced and halved
  • 1 small container of cherry tomatoes
  • 1 package of bocconcini ( small mozzarella balls)
  • sea salt and pepper

Directions:

1. Combine the vinegar and olive oil, mix well and set aside

2. Combine cucumbers,tomatoes, and mozzarella cheese together in a bowl. season with salt and pepper and drizzle balsamic/oil mix over the top

Shrimp and Brocoli Alfredo

I was looking for a quick dinner to throw together and when I came across this recipe I could not wait to put it together. I made a few adjustments like swapping chicken for shrimp and adding some green! This dish was so delicious. Thank you Pioneer Woman!

Recipe as follows:

Ingredients:

  • 12 oz pasta ( we used a campellini) Hope I spelled that right..
  • 4 TBLS butter
  • 1 lb shrimp
  • 1 or 2 brocoli crowns ( broken apart)
  • salt and pepper
  • 2 garlic gloves ( minced)
  • 3/4 cup white wine
  • 3 TBLS heavy cream
  • 1/2 cup half and half
  • low sodium chicken broth for thinning
  • 3/4 cup fresh grated parmeasan cheese

Directions:

1. Cook pasta according to package instruction

2. Heat 2 tablespoons of butter in a large skillet over medium-high heat. Add shrimp  and cook until no longer pink and set aside.

3. Add additional 2 tablespoons of butter to the skillet, followed by the minced garlic. Stir the garlic around the pan to avoid burning, and cook for 1 minute. Pour in wine, then let it bubble up and reduce for about 1 to 2 minutes. Add half-and-half, cream, and extra salt and pepper to taste, whisking constantly until it’s all combined. Allow liquid to heat up and thicken for a few minutes. If it gets too thick, you can thin it with a little chicken broth. I used maybe a tablespoon. At this point I added my broccoli to the sauce.

4. Remove it from the heat and add Parmesan to the sauce, then throw the cooked pasta right on top of it. Add the Shrimp and continue tossing until it’s all combined. I returned my pan to a very low heat to warm.

5. Serve immediately and top with fresh Parmesan.

Strawberry Spinach Salad- With poppy seed dressing

Strawberries.. When someone sells you a huge box of strawberries and they are everywhere what do you do..? Make salad of course! This salad was so delicious it will surely be a new go to recipe!

Recipe as follows:

Ingredients:

  • 6 cups fresh spinach
  • 1 pint strawberries sliced
  • 1 avocado. diced
  • 4 oz shredded cheddar cheese
  • 1/4 cup sliced almonds
  • 1/2 small red onion

Poppy-seed dressing:

  • 1/2 cup canola oil
  • 3 TBLS apple cider vinegar
  • 2 TBLS honey
  • 1 TBLS poppy seed
  • salt and pepper


Directions:

1. To assemble salad toss all salad ingredients together

2. To assemble dressing whisk together all ingredients
